I asked Meaghan to make something for breakfast this morning, and she whipped up the following recipe. Please note, she made this up herself.
1c butter (room temp)
1 tsp baking powder
1 mashed banana
Mix butter, sugar then add egg & vanilla. Add milk & banana. Mix dry ingredients together, and stir into wet until just mixed. Put in muffin tins and bake at 350 for 25 minutes. (about)
I’d like to know if anyone else tries it and how it turns out for you. Meaghan says you may need to lay off the cocoa a bit. I think there might be a bit too much butter.
They’re pretty good too. (understatement there)
Gah, we’re even getting her “real” baking ingredients like unsalted butter (instead of cheap margarine like I always get) and special vanilla imported from the Bahamas. And in case you missed it in the gallery, last week she made cake.
