I apologize in advance for posting this recipe. Oh sure, it looks easy – it is. That’s where the problem starts. It might even seem like these will taste good. It all goes downhill from there.
You will need:
one can sweetened condensed milk
lemon juice, fresh or from a bottle. Sadly, either will do.
whole graham crackers OR graham crackers crumbs and margarine
Empty the condensed milk into a bowl. Measure out 6 tablespoons of lemon juice and add to the milk. Stir to combine well.
Line an 8×8 pan with whole graham crackers, or make a crust.
Pour the milk mixture over the crackers/ crust. Let set in the fridge. If it is warm, let set in the freezer. It doesn’t take long. No, no, you don’t have to bake it – that’s it. It will be a little goopy, but firm enough to cut into squares. Keep refrigerated. Better yet, hide them in the freezer to spare everyone else.
I’m sorry. Once you take a bite, you will hate this recipe. You may even be like my friend Maria, who sends me emails every single time she makes a pan.

Lemon squares sound excellent–all I need are some digestive biscuits (no graham crackers here that I can find
) and some sweetened condensed milk. Yum!
Digestives would also totally work.
Sounds good-what are the graham crackers? Are they savoury a bit like Jacobs?

Laura–Graham crackers are, so far as I can tell, totally not available here in the UK–definitely not like Jacobs! They’re made with graham flour and are sweetened (you can even buy chocolate and cinnamon sugar ones). They’re what are frequently used in the US for cheesecake crusts and that sort of thing. Digestives work great as a substitute, I’ve discovered
