Midnight Mints

Usual warnings apply, not responsible for weight gain. :D

Base:
1/2 c butter or margarine
1/4 c sugar
5 TBSP cocoa
1 egg, beaten

Combine butter, sugar, and cocoa and bring slowly to a boil. Stir in egg to thicken and remove from heat. (This part is tricky because if the egg is not beaten first and not stirred in quickly enough, you’ll get bits of cooked egg in your base.)

Stir in:
1 3/4 c graham cracker crumbs
1/2 c walnuts*
3/4 c fine coconut*

Pack into bottom of 9×9 pan. *You can omit the nuts and/or coconut if you like, just add more graham cracker crumbs.

Middle layer:
1/3 c butter or margarine
3 TBSP milk
1 tsp peppermint flavouring
2 C icing (confectioner’s) sugar
green food colouring

Combine in a bowl and beat well. Tint a soft pretty green. Spread over the base layer.

Top:
2/3 c chocolate chips
2 TBSP butter or margarine

Melt chip and butter in a small pan over low heat, or in the microwave. Spread carefully over the middle layer. Chill to set and keep covered in fridge. Keeps well if it lasts that long, also freezes well. Supposedly cuts into 36 squares.

If so, each dinky tiny square is 3.5 WW points. (I figured it out, I was desperate.) I think we cut ours into 12 or 20 pieces. But – any calories in this totally don’t count if you share with friends, eat with family, or have at midnight by the light of the refridgerator.

    I have a recipe similar to this, but I make it very rarely — simply for the reason that I can’t stop eating them!
