I was going through the recipe category here, and discovered I hadn’t posted a recipe in seven months. Also, we have not had Sunday dinner in ages. And I consistantly cook the same things.
There was even a recipe in there twice.
So, today we had for lunch Thai wraps – chicken strips stir-fried with onoins and peppers, drizzled in bottled Thai sauce, wrapped in a flour tortilla with lettuce and whatever else they wanted. Meaghan had much the same, but with fake beef strips.
Supper was two lasagnas that I threw together with oven-bake noodles. Make a quick tomato sauce with canned or jarred sauce mixed with a can of diced tomatoes. I browned some ground pork and onions in one pot, and some onions, peppers and carrots in another (I “diced” them quickly in the food processor). I had found a small bit of spinach in the freezer, so I mixed that with a half-brick of cream cheese leftover and the last of the sour cream. I stuffed that in the middle of the veggie lasagna, and in the meat one I stuffed a layer of pepperoni.
Lest it seem too fancy, I just used what I had kicking around. Popped them in the oven at 25 degrees higher than recommended because I was running short of time, then I slapped up another coat of paint on the walls of the bathroom.
Hmmm. Maybe if I vow to report what we’re eating, I will eat better myself and keep on track with making meals around here. With Ron gone, it all usually tumbles down to “fend for yourself, eat when hungry” which hasn’t been working well.






Well given all the plumbing and painting and so on you might not want to have to cook every day. So maybe stuff like lasagna, that is good heated up the next day, is a good way to go. doing a big batch of chicken pieces might also be good. Have them hot with vegetables and potatoes or rice the first day and then there is cold chicken in the fridge for people fending for themselves.

you posted the shipwreck dinner last week, must not have categorized it as a recipe, though.
and I want to try the thai wraps. we’d have to use corn tortillas, but it should still work.
