Meaghan’s Molasses loaf cake

This recipe was completely developed by Meaghan. It is not an adaptation or tweak of an existing recipe; she figured it out on her own.

Also, Meaghan learned how to cook from me, so here’s more of a “loose guide” than a recipe. :D

about 1/3 c shortening (could be a bit less)
a teensy bit over 1/4 cup sugar (heaping maybe)
1 tsp vanilla
1 egg

Cream all together. Add around 1/2 c of molasses, maybe more. Mix up:

1/4 tsp both cinnamon and nutmeg
1/4 tsp baking powder
1 cup flour.

mix that in to the creamed ingredients, alternating with 1/3 to 1/2 cup milk until blended. Line a small loaf pan with foil and pour batter in. Bake at 325-350 (Meg says right in the middle of that for our slightly hot oven) for 40 mins.

Just so you know, getting her to write it down was a real exercise.

    MMMM that sounds lovely. I would be tempted to add ginger (in the style of Jamaican ginger cake).
