They’re catching on

Sunday morning I was sprawled on the chesterfield thumbing through quilting magazines.  My husband was cleaning the sun porch, my brother was vacuuming the stairs.  At the bottom step, my brother looked in and remarked….” I get it.  You make good food to give us energy, to allow us to do more housework”.

“Works for me”……I replied, and went back to my magazine.

For breakfast that morning I served boiled eggs, turkey bacon and lemon pepper oven fried potatoes.  To make the potatoes; peel two pounds of yellow fleshed potatoes; cut into chunks the size of a loonie. Rinse then soak in cold water for at least one hour but overnight is best.   The next morning, thoroughly drain the potatoes, and roll them in a clean dishcloth to remove any excess water.   Place dry potatoes in a large zip lock bag, add 3 Tbls olive oil and shake.   Add 1 Tbls lemon pepper and 2 tsp. garlic powder.    Bake in a 400 degree oven for approximately 25 minutes.

    Those potatoes sound great!! It is very cool to read a Canadian blog with Canadian terms! What is the purpose of the soaking? Could you do this without soaking the potatoes? Do yo cook them covered or uncovered?

    Hi Lisa, the soaking remove more of the starches, but they can be cooked uncovered either way……thanks ……..Mam
