Taking Monday off to celebrate the great ground hog, gave me an extra day for cooking. Based on this week’s specials at the grocery store and the extra veggies I purchased at Kredel’s winter market, here’s what we are eating this week.
Roasted chicken with root vegetables. One four pound chicken is enough for 3 meals, plus soup base. I boil the carcass with veggies in the crock pot to make chicken broth. After straining the broth I made chicken and vegetable soup. The bones give enough small bits of meat to make a bottle of chicken and broth for the kitty.
Bacon Lettuce Avocado Tomato wraps - an avocado cost a $1.00 a piece this week, good size, very buttery, love them. Two cups of cooked chicken left over from yesterday and only used two slices of bacon.
Pasta bake – spaghetti sauce made last week, tossed with cooked pasta, a sprinkle of parmesan, baked in the oven until hot.
