We have been blessed with yet another snow storm. DH had a doctor appointment scheduled for today but luckily the receptionist managed to squeeze him in yesterday. Thank heavens, the roads today are a mess.
DH is sanding and staining the kitchen floor this week so the menu had to be quick and easy.
Boneless pork chop with tossed salad
Korean chicken with rice - This is one of the easiest tastiest recipes I have. I made the marinade before leaving for work yesterday, DH just had to pop it in the oven today. To reduce the fat content I use skinless, boneless chicken thighs.
Caesar salad with sauteed chicken breasts – DH cooked an extra breast to use for sandwiches, much cheaper than cold cuts, and much better for him.
Meatballs with spaghetti sauce – done in the crock pot. Yes both are processed foods but sometimes you just have to live on the edge.
There’s a million sites on the internet to help with meal preparation. I plan to try a few of these slow cooker freezer meals from Six Sisters.
