Family Dinner Swap: Easy homebaked egg rolls

When our children were younger, my sister Tammy and I would constantly telephone each other, asking What are you cooking for dinner tonight.

Amy at Park City Girl has taken this one step further and is sponsoring a family dinner swap.  So for some great ideas for dinner, check out her blog.  Here is my entry.  For the cost of 3 take out egg rolls you can make a dozen home made egg rolls.  Add a bowl of rice, a side of veggies, meatballs in sweet and sour sauce or chicken nuggets, you have  dinner in a hurryé

Easy home baked egg rolls

Preheat oven to 350 degrees. Ingredients:

1 package egg roll wrappers
one bag coleslaw mix
1 small can of mushrooms (or a cup diced cooked mushrooms)
1 tsp garlic, minced
1/4 tsp ground ginger
a splash of soy sauce
salt and pepper
cooking spray or olive oil in a mister

Empty coleslaw into a large microwave-safe bowl, cover, and microwave 3-6 minutes.  Drain coleslaw.   Drain the canned mushrooms and finely chop. Add to the coleslaw along with soy sauce, garlic and ground ginger. Mix thoroughly.  Place 2 tablespoons of mix on the middle of each egg roll wrapper.  Roll tightly.  Spritz each side of egg roll with olive oil or cooking spray.

Bake 15 minutes, then flip the egg rolls over and bake an additional 10-15 minutes. Let cool slightly before serving.  Serve with dipping sauce.

Variations – add chopped green onions, chopped cook shrimp, cooked ground pork, whatever makes your egg roll
